Gâteau Moka or Mocha Cake is a classic French coffee-based cake, thought to be named after the type of coffee beans exported from the 18th century coffee trading port of Mokha in Yemen. Our ode to this classic features a crunchy hazelnut base with alternating layers of rich coffee buttercream and chocolate sponge soaked in coffee syrup and coated in caramelised almond crumbs.
